Ingredients • 1 medium yellow onion • 2 cloves garlic • 1 Tablespoon olive oil • 2 cups brown rice • 1 cup frozen corn • 1 cup salsa • 1 15-oz can black beans, rinsed • 1 14.5-oz can chicken broth • 1 teaspoon garlic powder • 1 teaspoon onion powder • 1 teaspoon oregano • ½ teaspoon chili powder • ½ teaspoon cumin • ½ teaspoon red pepper flakes (optional) • ½ teaspoon ground cayenne pepper (optional) • Salt and pepper to taste (about ½ to 1 teaspoon each) • 2 boneless, skinless chicken breasts (thawed or frozen!) • Topping ideas: flaky sea salt, shredded cheddar cheese, lime
