Crispy quinoa on my salads for the forseeable future. as much as i love a clunky crouton, half the time, i don’t even add them because my mouth simply doesn’t feel up to it. but the delicate yet substantial crunch of the crispy quinoa has completely changed my salad game. I’ve made SEVERAL batches in the last few weeks, it’s just flat out addicting. it’s truly salad crack!  HOW TO: preheat oven to 375. line a baking sheet with a silicone mat or parchment paper so it doesn’t stick. boil 1 cup of quinoa in 2 cups of salted water. cover, then reduce heat to LOW and simmer for 15 minutes. turn the heat off, and let sit for an additional 5 minutes, then fluff with fork.  Add about 2 tbsp olive oil, and stir. These are SO versatile!  They have a neutral taste that can pair with a lot.  You could make them savory with tacos or a hummus wrap or sweet with almond butter & honey. 

Add any spices to the batter you wish - sea salt, garlic powder, etc. I added a few shakes of garlic powder to my taco batch. 

I used the organic quinoa from Costco. 

Rinse 1 cup of quinoa. 
Soak submerged in water for 3 hours. 
Drain & Rinse. 
Add quinoa + 1 cup water and optional spices to a high speed blender. 
Blend on high for 1 minute. 
Heat a non-stick pan over medium heat for a few minutes prior to adding batter. 
Add 1/4 cup batter to a really good non-stick pan.
