While there are plenty of veggie and sushi roll recipes out there.  Most of them use rice or rice paper wraps.  I was eating a lot of both of these lately and I wanted a change . These easy roll ups don’t use either of those ingredients, but I did add nori for a sushi type flavor

.if you don’t want to make the dipping sauce then you can add some spicy mayo to the wraps and eat them that way, or you can add a layer of hummus. 

🌱low carb Sushi veggie wrap🌱

4 romaine leaves
1 carrot, cut into strips 
1 cucumbers cut into strips
1/2 avocado slices thin
1 sheet of nori
