Pad Thai Celebrity chef and restaurateur Richard Blais knows how to amp up the flavor on classic recipes. His take on Pad Thai is no exception. Cook Time: 1-30 minutes Ingredients ?1 (12 ounce) package rice noodles 2 tablespoons sliced garlic 1 pound firm tofu chopped in cubes 1/4 cup vegetable oil 4 eggs whisked 1 tablespoon white wine vinegar 2 tablespoons fish sauce 3 tablespoons coconut or palm sugar 1 tablespoon tamarind purée or Lipton sweet tea powder 1 tablespoon diced red jalapeño 2 cups bean sprouts 1/4 cup crushed roasted peanuts 3 green onions, chopped in 1/2 pieces 1 lime, cut into wedges Cooking Directions Soak the rice noodles until soft. In a hot large pan, sauté the garlic, chili, half the green onions, half the sprouts and half the peanuts. Add the sugar, tamarind or tea, fish sauce and noodles and toss. Garnish with the remaining peanuts, sprouts, onions and lime. Alternative: Substitute chicken thighs for tofu, but this is a perfect tofu introduction. Serve with white vinegar and chopped salted jalapeños in a mason jar for extra oomph! Serve with canned prepared fried onions as an additional crunch
