Kitchen - Cranberry Walnut Chickpea Salad with Orange Vinaigrette Ingredients: For the salad: 1 can (15 oz) chickpeas, drained and rinsed 1/2 cup dried cranberries 1/2 cup chopped walnuts 1/2 cup diced celery 1/2 cup chopped cucumber 1/4 cup red onion, finely diced 1/4 cup chopped fresh parsley 2 cups mixed greens or baby spinach (optional, for serving) For the orange vinaigrette: 1/4 cup fresh orange juice 1 tablespoon orange zest 2 tablespoons apple cider vinegar 1 tablespoon honey or maple syrup 1/4 cup olive oil Salt and black pepper to taste Directions: In a large bowl, combine chickpeas, cranberries, walnuts, celery, cucumber, red onion, and parsley. Toss gently. In a small bowl or jar, whisk together orange juice, orange zest, apple cider vinegar, honey (or maple syrup), olive oil, salt, and pepper until well blended. Pour the vinaigrette over the chickpea mixture and toss to coat evenly. Serve on its own or over a bed of greens. Chill for 15–20 minutes before serving for best flavor.
