In fact, it's the fiesta blend because that's going to go perfect in this mixture. Fiesta. Here we go. Fiesta blend. Great and I'm just going to sprinkle some of that right on top. And that's it. Lid goes on. We're going to cook that chicken until it's done enough that it won't kill you. Which ends up being about two to 3 hours. Then we're going to shred the chicken and add the pasta. What are your puppies favorite treats? Mine love veggies. Alright, our chicken is done cooking and we are almost ready to assemble our fusion pasta. This is a blend of Mexican and Italian flavors. Do not come for me. Try it before you knock it because I think it's going to be delicious but we've gotta get the chicken out and you see how the sauce. Didn't it smell good? Mm it does smell good. It actually is really great. Now, I've got this device will help me shred my chicken. Okay. We're going to yes it's already falling apart so this is going to be perfectly cooked. Take your chicken breasts. Add it onto our little tray and this will shred up your chicken nicely. Look at that. So it cooks in the pot with all the sauces so all the flavors go into it. Mm hmm. And then you have that beautiful shredded chicken. That's perfect. Now, our shredded chicken goes back into the pot a with our Alfredo sauce and our salsa and we had some taco seasoning in there and some bell pepper. All of our chicken out Mix that up but there's one more important piece of the puzzle that we have to add, our pasta. Cooked pasta. Oh my. And then you just blend it up That's like Mexican pasta, right? The pasta's Italian. Oh okay. The spices and the salsa is a Mexican blend of flavors. But this is a new way to enjoy a classic Alfredo. Oh this is going to be all the Mexican and Italian restaurants. We will see if they start asking me for my recipe. This is diced tomatoes and green chilies. It is a Texas staple. We're going to go with one can of cream of chicken soup directly on top of the rotel and you want to scrape all that good stuff out of that can. Up next is one can of cream of mushroom soup which going to go directly on top of the cream of chicken. Now, I sauteed an entire white onion and green bell pepper. You can use a red bell pepper if you prefer or poblano pepper. It doesn't really matter. Now, we're going to give everything a quick stir here. This is going to form a delicious filling. Now, let me know in the comments. Who's heard of King Ranch Chicken Casserole. Have you had it before? Now, we need about two pounds or three cups of chicken. So, I'm going to show you how to shred chicken easily. We're going to get your chicken shredder tool. Put a couple chicken breast here. Squeeze that down and just twist it a few times and this thing shreds so easily. It is the easiest way to shred chicken. We're going to pour that into our mixing bowl and shred our second round of chicken. Now, I boiled my chicken and chicken broth but you can use grilled chicken rotisserie. It doesn't matter. We're going to pour a second batch into our mixing bowl and we're going to go ahead and season this. We're going to use some salt, some pepper, and do about two teaspoons of cumin. I love this stuff. This is going to give it that wonderful text mix flavor. We're going to do about a teaspoon of powder. This is also going to provide some nice flavor and some beautiful color and we're going to do a few shakes of garlic powder just like that. I love to add a little bit of lime to mine but you don't have to add it to yours. I'm just going to go directly on top of the chicken and you guys, this smells amazing. We're going to give everything a quick mix here. Now, if your consistency is looking a little bit thick like mine, you can always add a little bit of chicken broth. We're going to add about a fourth a cup right on top and I like to add a little bit of this queso queso Dia cheese. This is a nice melty cheese. It is going to give this thing a creamy, delicious flavor. Now, we're going to give this one more mix, incorporate all those ingredients and this is the texture we are looking for you guys and once our mixture is fully mixed up, we are going to bring our casserole dish back over. We're going to pour half of that chicken mixture on top and we're going to spread this out evenly. Now, practically, every family in Texas has their own King Ranch Chicken recipe. This one was inspired by my great grandmother's cookbook and it is one of my absolute favorites. Now, we're going to top with another layer of corn tortillas. We have about five more cut into quarters. We're just going to place these evenly over the top. We got a nice, even layer of corn tortillas spread all over this casserole and we're going to top with the remainder of our chicken mixture just right on top and we're going to give that an even spread as well. Now, we have about a cup, cup and a half of shredded cheddar cheese. We're going to put a nice, thick coating of cheese on this. We want this to be very cheesy and I have some Texas-sized jalapenos. I'm going to put these on half because I love spicy. My wife does not like spicy. So, we're not going to put jalapenos on the other end. Our oven is preheated at 350 degrees. We're going to throw this in for about 35 minutes uncovered. Alright, our King Ranch Chicken Casserole is completely done and it smells amazing. You guys always get on to me for taking a piece of my wife's side. So, today, I'm making sure I take for my side with those jalapenos and look how good that looks you guys. This is good to go as is or you can top with a little bit of sour cream and a little bit of fresh chopped cilantro. Let's take a bite. Yeehaw. That's good.
