Roasted Cauliflower Potato Soup
Content Creator: @mitali.eats INGREDIENTS 2 medium potatoes, peeled & chopped 1/2 head of cauliflower, chopped into florets 1/2 a garlic bulb 1/4 red onion, chopped 3 tbsp evoo salt, pepper 1 1/2 cups vegetable broth (or more, depending on how runny you want it to be) TOPPING coconut cream fresh thyme baguette @gustafoods cheese DIRECTIONS add the potatoes, cauliflower, garlic, onion, olive oil, salt, and pepper to a baking dish and cover with aluminum foil. bake at 400F for 25-30 minutes covered and 10 more minutes uncovered. add all the ingredients to a blender along with vegetable broth and blend until smooth. pour into a bowl, top with coconut cream, fresh thyme, grated cheese, and crushed pepper. enjoy!

15min · 1 serving Ingredients: • 2 tbsp. evoo or avocado oil • 4-5 cloves garlic, minced • 1 large shallot (or 3-4 small, about 3/4 c. after dicing) • 2-3 sprigs of rosemary (depending on how strong you want the flavor) • 3 c. vegetable broth • 2 lbs russet potatoes (about 3-4 potatoes), peeled & diced • 1 15 oz. can of cannellini beans, rinsed & drained • salt & pepper to taste • fresh rosemary, thyme, or parsley for garnish Instructions: 1. In a large pot, heat oil over medium heat. 2. Add garlic and rosemary & cook for a minute. 3. Add the potatoes, salt & pepper, and broth. Then add the beans. Bring to a boil, reduce to a simmer, and allow the potatoes to cook until fork tender (about 15-20 minutes) 4. Transfer soup to a blender (or use an immersion blender) and blend
