Sundried Tomato Chicken Alfredo Meatballs By@thecymbal.life
Ingredients: 3 TBSP Olive Oil 16 oz Ground Chicken 1/2 Onion, finely diced 4 Cloves Garlic, minced 2 TBSP Fresh Parsley, chopped 2 TBSP Sun Dried Tomato (chopped or puréed) 2 tsp Salt 1 tsp Black Pepper 1.5 C Freshly Grated Parmesan (divided) 1/2 C Panko Bread Crumbs 4 TBSP Butter 1 C Heavy Whipping Cream Combine chicken, onion, garlic, parsley, tomatoes, 1/2 C cheese, panko, salt and pepper. Roll into ~2 inch balls. Brown meatballs on all sides until cooked through - remove from pan and set aside. Add butter to the same skillet and melt, scrape up all the browned bits from the bottom. Add cream and stir until it thickens and bubbles. Stir in remaining cheese until smooth and creamy. Return meatballs to the pan and toss to coat.

Ingredients: 🛒 3 tortillas Oil spray Pizza sauce Bulgarian cheese Yellow/ grated mozzarella Olives + corn + toppings that you like Directions:👩🏻‍🍳 Fold tortillas as in the video and insert a toothpick to hold the closure. Place on a tray, spray with oil, and bake for 8 minutes in a preheated oven at 180°. Arrange in a mold that will hold the cones, Fill with toppings and bake for another 10 minutes to melt the cheese. Enjoy 🍕🌽🧀

Ingredients: 🛒 - Rustic baguette (that’s the name of the type of baguette I used, purchased at the supermarket) - Pesto spread - Mozzarella roll - Tomato - Olive oil - Coarse salt Directions - Cut holes in the baguette (not all the way through), - Spread between pesto, - Place mozzarella slices and tomato slices. - Spread with olive oil, sprinkle some coarse salt to taste, - Bake for 15-20 minutes in a preheated oven at 180°. Ingredients: 2 large potatoes 2 tbsp olive oil (divided) Salt & pepper to taste 50g mozzarella 8 cherry tomatoes (halved) 5 slices shallots Handful of spinach (wilted) 2 eggs 2 tbsp cream cheese 1/2 tsp garlic powder 1/2 tsp nutmeg 50ml milk Parmesan & basil leaves for garnish Directions: 1. Boil potatoes, then transfer to a 20cm greased baking tin and crush. Press firmly, creating the sides. Drizzle with olive oil, sprinkle with salt, and bake at 200C (fan) for 40-45 min. 2. Add mozzarella, tomatoes, shallots, and spinach. 3. Whisk eggs, cream cheese, salt, pepper, nutmeg, garlic powder, and milk. Pour over the potato base. 4. Bake for 30-35 min until settled. 5. Sprinkle Parmesan, garnish with basil. Potato perfection! 🍴

Serves 4 | 1 x 400g tin chickpeas, drained and dried - 2 tbsp olive oil, plus extra for drizzling - 2 tsp smoked paprika - 2 tsp garlic powder - 2 tsp dried oregano - 1 tsp chilli flakes - 200g feta - 110g yogurt - 1 clove garlic - The zest of ½ a lemon - Salt . 1. Pre-heat the oven to 200 fan. Chuck the chickpeas into bowl and add the olive oil. smoked paprika, garlic powder, dried oregano, chilli flakes and a good pinch of salt. Mix well and tip into a roasting tray. Roast for 20-25 minutes or until crispy but still soft inside. 2. Meanwhile, blitz the feta together with the yogurt, garlic and lemon zest in a food processor until super smooth. Add salt to taste. 3. Swirl the feta onto a plate and top with the chickpeas. Drizzle over a little oil and serve immediately
