Cube the potatoes into 2-inch pieces, then transfer them to a large stockpot. Fill the pot with enough water to cover the potatoes and bring it to a boil over medium heat. Allow the potatoes to boil until they are tender when pierced with a fork, typically about 15-20 minutes. Once the potatoes are tender, drain the water and transfer the cooked potatoes to a large mixing bowl. Use a potato masher or fork to mash the potatoes until they reach a smooth consistency.
