Antipasti Deviled Eggs
Deviled eggs two ways 🐣 Tools I used : 1. pot for boiling water 2. deviled egg tray @Recipes ------------------------- Ingredients • 6 large eggs (I prefer pasture raised) • 3 tbsp mayo (my fav is Duke’s) • 1 tsp dijon mustard • 2 tsp dill pickle juice • pinch of salt • 1/2 tsp sriracha (or hot sauce of choice) Toppings • tamed or hot pickled jalapeños • thinly sliced green onions • garlic chilli oil • cooked bacon bits Directions 1. Prepare the Eggs: • Fill a large pot with 2-3 inches of water and place it on the stove over medium heat. • Once the water starts to simmer, carefully add the eggs to the pot. • Cover the pot with a lid and let the eggs cook for 12 minutes. 2. Cool the Eggs: • After 12 minutes, turn off the heat and let the eggs sit in the pot with the lid on for an additional 2 minutes. • Run cold water directly into the pot to cool them down quickly. • Let the eggs sit in the cold water for about 1 minute. 3. Prepare the Filling: • Peel the eggs with a small spoon and slice them in half lengthwise. • In between each cut wipe the knife with a wet paper towel to keep the knife clean. • Gently scoop out the yolks and place them in a mixing bowl. • Mash yolks before adding mayonnaise, mustard, pickle juice, Sriracha, salt, and pepper to the bowl with the mashed egg yolks. • Mash and mix everything together until smooth and creamy. Adjust seasoning to taste. 4. Assemble the Deviled Eggs: • Spoon the egg yolk mixture into a piping bag or a plastic bag with a corner snipped off. • Pipe the filling into the hollowed-out egg white halves. 5. Add Toppings: • Sprinkle your preferred toppings over the filled deviled eggs centers and cover as much as possible to avoid oxidation of the egg yolk. (AKA when the egg starts to look a little crusty.) • Bacon & Jalapeño : sprinkle bacon bits and then lightly lay pickled jalapeño on top of the bacon bits • Garlic Chili Oil & Green Onion : lightly drizzle very tiny amounts of garlic chili oil on the egg yolk, move it around a bit to completely cover the yolk if needed and then cover with thin slices of green onions. I like to cut my green onions on an angle. 6.
