2 tbs olive oil
1 large zucchini, diced
1 large red bell pepper, diced
1 large carrot, fine dice
1 head broccoli, cut into small florets
salt, pepper, garlic and onion powder to taste
7 eggs
1/2 cup cottage cheese
1 cup shredded mozzarella
instructions
Preheat your oven to 350℉. Line a 9×5 loaf pan with parchment paper.

In a large deep skillet, heat your oil on medium high. Add in the zucchini, carrots and bell pepper. Saute until slightly softened – about 5 minutes – stirring occassionally.
