And who would have thought that it would be such a hit that we finished all 6 in 1 sitting! I love the contrast of the gritty cornmeal on the outside and the soft airy nooks and crannies inside, perfect for soaking up butter or spreads, and excellent sandwich base. This bread is lighter than the traditional English muffin minus the chewiness of a bagel, with a subtle tang from the sourdough starter and a hint of sweetness. Let it rest 60-90mins. Divide in 8 balls and shape by pressing a hole in the middle. Water bath: -about 2 liters water -1/4 cup (60ml) agave or maple syrup Bring to a simmer then cook the bagels 1min each side. Brush with vegan cream (and add sesame seeds if you want). Of course you do not have to use homemade bagels, but if you’re interested, they’re actually pretty easy to make and they’re great to keep on hand for a snack or quick breakfast! You can store them in the freezer for up to 6 months, so they’re great for meal prep.
