I Scream for Ice Cream!

I love ice cream and had to give it up some time ago due to milk. When coconut milk came into the picture, it opened up the ice cream door to new possibilities! Woot! Making a conscious effort to make my own food and veer away from premade packaged food, I want to know what's in my ice cream and not have to pull out a dictionary to look up terms I've never heard of. That being said, I Scream for Ice Cream! Scream along with me and lets get cracking on making our own creamy, iced goodness!!

Lloyd Rose on Instagram: "Nature’s Golden Mango Ice Cream is one of the best cold treats you can make during the warmer months. 650g of fresh cut mango (use 2 different types of mango if possible) 1 can full fat coconut milk 3 tbsp brown sugar (or sweetener of choice) The juice from 1 lime 1/3 cup small cubes of fresh mangoes 1/2 tbsp lime zest Blend the 650g of fresh mango with the coconut milk, brown sugar and lime juice. Strain the mixture to remove any mango fibers then place the mixture into a metal baking pan. Mix in the mango chunks and lime zest then cover the pan with parchment paper or plastic wrap. Freeze on a plate or sheet pan until frozen solid, about 4 hours. Transfer to a food processor and process until dry and crumbly. Pause for a minute and process again until smooth. Pack it down a bit with a spatula, scoop and serve. I prefer to eat it right away but you can store it in the freezer if you need to. If you freeze it overnight or longer, it will get very hard so leave on the counter until it is scoopable.
