You all know I love Persian cucumbers with practically every meal, and cucumber salads are having their moment (finally, thanks to @logansfewd )so lets make a tzatziki inspired salad - this has the best textures and flavors in each bite and its such a healthy way to stay satiated. . Here is how I made it: . 1.Thinly slice 6 Persian or mini cucumbers. Add to a large mason jar or bowl. . 2.Finely dice half a small red onion. You want this to be super finely diced. . 3.Super finely chop a handful of fresh dill (about 2-3 tablespoons) . 4.Squeeze the juice of half a lemon and add 1 minced garlic clove. . 5. Top with 2 tablespoons of a good thick plain greek yogurt, 2 tablespoons of a GOOD olive oil, a couple pinches salt, pepper, and 1 tbsp everything bagel seasoning. .
