Makes 4 servings⁣ 🍣 🫙Salmon⁣ 4, 4-6oz filets of salmon, deboned⁣ 2 tb avocado oil⁣ 1 tsp dried oregano⁣ ½ tsp paprika⁣ ½ tsp garlic powder⁣ ¼ tsp salt⁣ ¼ tsp black pepper⁣ ¼ tsp onion powder⁣ ¼ tsp cayenne⁣ ⁣ 🫙 Spicy mayo sauce⁣ ¼ cup kewpie mayonnaise⁣ 1 tb low sodium soy sauce⁣ 1 tb sriracha⁣ 2 tsp maple syrup⁣ ⁣ 🥒 Salad⁣ ½ cup English cucumber, finely diced⁣ ¼ cup jalapeno, finely diced⁣ 1 small avocado, finely diced⁣ 1 tb lime juice⁣ pinch salt and pepper⁣ ⁣ 🍚 Rice⁣ Prepare 4-6 servings rice according to package instructions⁣ ⁣ Prepare the sauce by whisking together all of the ingredients. Set aside. Prepare the salad by chopping everything, adding to a bowl and set aside. Make rice and set aside. Make spice rub and set aside. To make the salmon, cut 1 inch slices all the way down each piece of salmon, making sure not to cut the skin. It should be like an accordion. Rub generously with avocado oil, getting inside crevices with your fingers. Rub with spices. Transfer to a parchment lined backing sheet and bake at 400F for 12-15 min. We’re going to top the salmon twice for maximum flavor - once before the oven, and once right before serving. . Here is how I made it: . 1.First, lets preheat the oven at 400F. Grab a 1lb salmon filet (or larger, just increase the recipe) and put it on a bakind dish or on a piece of parchment paper on a baking sheet while you do the rest of the steps. . 2.For the salmon topping, I mixed together 6 thinly sliced garlic cloves, 2 tbsp of chopped capers, the zest of a large lemon, the juice of half a lemon, 2 tbsp olive oil, a couple pinches of salt, pepper, 1 tbsp sweet paprika, and 1 tsp of Calabrian chili flakes for a burst of heat and flavor. Mix well, then cover the salmon evenly. . 3.Put the salmon in the oven at 400F for about 17-18 minutes. This depends on the thickness of your salmon, so if you are using a thicker or larger piece, it may take a couple more minutes. . 4.For added flavor and presentation, we’re going to top the salmon again. Grab a handful of fresh flat parsley and roughly chop and add to a bowl.
