Traditional mochi recipe

Mochi are small, sweet Japanese cakes made with glutinous rice flour (mochiko). They have a soft, chewy outer layer and a deliciously sticky filling made of sweetened red bean paste. Freezing the red bean paste before you use it is optional but it does make the process easier.

This is a specific type of mochi called “Kirimochi,” meaning “cut mochi,” and it can actually be pretty easy to make at home! While the traditional methods typically involve a large wooden hammer and mortar, a mochi maker is a good alternative. But we had neither of those, and instead used what we had (a KitchenAid Stand Mixer) and are happy with the results.
