Something I ALWAYS make every year (usually more than once!) is this cookie cake - it's in the oven in less than 10 minutes and it has all the flavours of a mince pie, with none of the faff! Have it when it's still warm, curled up on the sofa in front of a Christmas film 🌟 I've written up the recipe below - let me know if this is going on the Christmas list! A x 225g plain flour 185g butter 100g caster sugar (plus extra to sprinkle on top) 1 tsp ground cinnamon 200g mincemeat 1 Egg Heat the oven to 180C Beat the butter and sugar together until pale and creamy. Add the egg and mix thoroughly. Stir in the flour and cinnamon and mix until combined. Grease a 20cm

For filling: 3 c. cranberries (fresh or frozen) ¾ c. sugar ½ chopped walnuts (or pecans) For batter: 2 eggs (beaten) 1 c. sugar 1 c. flour ¾ c. (1 ½ sticks) melted Place the cranberries and walnuts in a greased pie pan. Pour in sugar and mix well. Make the batter by pouring sugar, flour, eggs and melted butter into a mixing bowl. Mix well. The creamy coconut filling, topped with fluffy whipped cream and toasted coconut, is a perfect combo of flavors and textures. I'm going to add another layer of our pecans. Just right on top. Yum. And maybe you switch out that second layer for like an almond or a walnut. I'm going double pecan now. I like pecans. Of pecans. So good and we're going to top it with more of our chocolate chips. Oh yes. Can't have enough chocolate. Right. Delicious. Okay and just like that, we're going to put our Hello Dolly Pie in the oven. It's set at three fifty. Alrighty, so we have this in the oven about 20 minutes. I let it cool just a bit. Wow you guys. Yum. Look at this pie. Wow. That is fantastic. Now of course you could serve this with whipped cream or ice cream. I'm just going to go straight up right as is. This looks incredible. Oh my goodness. Okay. Here we go. Love that coconut on there. Oh yeah. Now, that's good.

They easily peal and don’t need to go through that boiling and cooling process. I diced up about 3 cups of juicy peaches and baked this for 55 minutes at 350 degrees and it was awesome!
