Here’s a much better option! 3-Ingredient Samoa 🍪 Cookies No baking required and they are absolutely delightful! You’ll need: 20 pitted dates soaked in warm water (I used @terradelyssa already pitted from Costco OR 20 medjool dates, pitted and soaked 1 cup toasted coconut flakes 3/4 cup melted dark chocolate mineral salt (optional) 1. Pit your dates and soak them in warm water for a couple minutes to soften. 2. Blend the dates in a food processor. Add a little water if needed and scape down the sides until the mixture is smooth. 3. Stir in the toasted coconut (I toasted mine for five minutes in a pan) 4. Roll the mixture into balls and place them on a lined baking sheet. Flatten with a spoon. 5. Poke holes in the center (I used a metal straw for this). 6. Place the cookies in the freezer while you melt your chocolate. 7. Remove from the freezer and dip the bottom of each cookie into the melted chocolate. Drizzle additional chocolate on top. 8. Place back in the freezer for about 30 minutes and enjoy!
