Place the chicken, onion, garlic, sun-dried tomatoes, tomato oil, and chicken stock into the slow cooker. Cook on high for 2 hours or on low for 4 hours. 2️⃣ After cooking, turn the slow cooker to low or off. Stir in the double cream, Parmesan cheese, and spinach. Let this sit for 20–30 minutes to thicken. 3️⃣ Potatoes: Chop the potatoes into cubes. You can parboil them if needed, but I use Cypress potatoes which are soft enough to go straight into the air fryer. Wash them, then coat with a bit of olive oil, garlic salt, and oregano. - Air fry at 200°C for 15 minutes. - Add 20 g light butter, a minced garlic clove, and oregano, then cook at 170°C for another 5 minutes. Adjust cooking time as needed based on your preference. 4️⃣ Serve everything in a bowl, topped with extra Parmesan if desired. This makes about 3–4 portions, depending on your appetite.
