Ingredients:
* 1 cup all-purpose flour
* 2 tablespoons brown sugar
* 2 teaspoons baking powder
* 1/4 teaspoon salt
* 1/2 teaspoon ground cinnamon
* 1 tsp pumpkin spice 
* 1/2 cup canned pumpkin puree
* 1 large egg
* 2 tablespoons unsalted butter, melted (plus more for cooking)
* 1 teaspoon vanilla extract
* 1 c milk
Optional Toppings:
* Maple syrup
* Whipped cream
* Chopped pecans or walnuts
* A sprinkle of additional cinnamon sugar

Instructions:
 * In a bowl, combine the milk, pumpkin puree, egg, melted butter, and vanilla extract. Mix well until fully combined.
 *  Sift the flour, sugar, baking powder, salt, cinnamon, pumpkin spice, all in one bowl
