Rotisserie Chicken Egg Drop Soup Ingredients: • 1 leftover rotisserie chicken (bones, skin, and some meat) • 10 cups water • 1 onion, quartered • 2 slices fresh ginger • 4 cups chicken bone broth • 2 Tbsps corn starch • 2 Tbsps water • 3 eggs, beaten • 1/4 tsp turmeric powder • Salt to taste • White pepper to taste • 1 tsp sesame oil • 2 green onions, chopped Steps: 1. Shred and save 2 cups of rotisserie chicken; set aside. 2. Place the remaining rotisserie chicken scraps in a large pot; add 10 cups of water, onion, and ginger slices. 3. Bring to a boil over medium-high heat; skim off any scum that rises. Reduce heat, cover, and simmer gently for 2 hours. Strain the broth; discard solids. 4. In a separate pot, bring 4 cups of the chicken bone broth and the 2 cups of shredded chicken to a boil over medium heat. 5. Combine corn starch and room temperature water to make a slurry; mix until smooth. Slowly add the slurry to the simmering broth, stirring continuously to thicken. 6. Slowly drizzle the beaten eggs into the simmering broth in a circular motion, gently stirring to create delicate egg ribbons. 7. Add turmeric powder, salt, white pepper, sesame oil, and green onions; stir gently to combine. Enjoy!
