ROASTED PEPPER PASTA 🍝

STOVE TOP APPLE CAKE 🍰
RECIPE (23cm diameter nonstick pan): -90g flour -10g corn starch -50g sugar Stir -1 Tsp baking powder -30g oil -85ml plant milk -a squeeze of lemon -cinnamon Add to the dry mix and carefully stir that in. -2 Tbsp vegan butter -1 Tbsp sugar Heat it up in a pan until the sugar kinda caramalises and turns brown. -2 apples, sliced Sauté the apples for a few minutes. Pour the batter on top. Cover and steam on medium heat for 15-20mins. Let it cool down before cutting in slices.

RECIPE (1 serving, 5min prep time): -2 Tbsp coconut yogurt -1 frozen banana -a handful roasted nuts -optional vegan coconut condensed milk on top Add the the yogurt to a bowl or plate. Grate the frozen banana. Top with nuts, coconut condensed milk or other things you like and enjoy. 🫶

RECIPE (3 servings, 25min prep time): -1 block (200g) firm tofu, crumbled -1 small onion, grated -2 cloves garlic, grated -a big handful parsley, chopped -a big handful mint, chopped -3 proper Tbsp tomato sauce -6 Tbsp flour (chickpea flour for the gf version) -salt and pepper to taste -1/2 Tbsp red wine vinegar Mash and combine. Shape into 8-10balls. Fry in oil until golden brown

BANG BANG SALAD 💥
RECIPE (4 servings, 15min prep time): -1/2 cabbage (Napa, pointed or savoy) -1 cucumber -2 medium carrots -a bunch of cilantro -1/2 bunch mint FINELY chop everything (I grated the carrots). Dressing: -4 Tbsp tahini or peanut butter -2 Tsp sriracha -1 Tsp curry powder -4 Tbsp maple syrup or agave -4 Tbsp white wine vinegar or lime juice -salt to taste Stir until well combined. Toss in the veggies. Serve with roasted peanuts or it’s also great on sandwiches. It’ll last in the fridge up to 3 days

SHENG JIAN bao 🥟
RECIPE (4 servings, 90min prep time): Dough: -2/3 cup (160ml) lukewarm water -1 Tsp instant -1 Tsp sugar -1 Tbsp oil MIX -2 cups (250g) flour -3 Tbsp corn starch -a pinch of salt Knead well and let the dough rest for 1h. Divide in 26 pieces and roll them out on a floured working surface. Filling: -250g tempeh or tofu, crumbled -2 scallions, chopped -2 cloves garlic, chopped -a thumbsize piece of ginger, minced -1 Tbsp soy sauce -1 Tbsp sweet soy sauce -2 Tsp white vinegar Knead 2-3mins and add 1-2 Tsp to a dough circle. Fold and seal. Heat up oil in a pan and fry until browned on medium heat. Add water and let the buns steam covered for about 10mins. Then they’re done. Dipping sauce: -3 Tvsp agave -3 Tbsp white vinegar -1 Tsp chili powder Mix and serve with the dumplings.😋

Roast at 200C/400F 15mins, flip and bake for another 10-15mins. Butter bean whip: -1 Can (200g) cooked white beans, drained -juice and zest of 1/2 lemon -salt and pepper to taste -3 Tbsp olive oil  -a splash of water Blend until smooth. Sweet-spicy topping: -1 Tbsp vinegar -1 Tbsp agave -1 Tsp chili powder  Mix. Serve the cabbage on the whip with the sweet and spicy topping and optionally some sesame.
