Super Flavorful Greek Cod Filets- this is loaded with so much Mediterranean flavors and one sheet pan meals are always a win-win! Ingredients: 4 Cod Filets (almost 2 lbs) 1 lbs cherry tomatoes 1 cup Kalamata olives, pitted 1 medium red onion, thinly sliced 4 garlic cloves 2 cups spinach, fresh (roughly chopped) 2 oz @dodoni_international feta cheese 1/2 lemon, sliced 1/2 cup white wine 1 tsp oregano 1 tsp salt 6 tbs olive oil The zest of 1 lemon Black pepper, to taste Dill for garnish Method: 1. Preheat oven at 400 F; 2. To a sheet pan add tomatoes, Kalamata olives, onions, garlic, lemon slices, olive oil, white wine, oregano and black pepper; mix and roast for about 15-20 minutes; 3. Season fish with olive oil, salt, pepper and lemon zest; 4. Add spinach and gently mix
