Y'all ready for this? Next, you're going to take rotisserie chicken and shred it up in your food processor or four chicken breast. Then, dump in one can of Rotel, one block of shredded Colby Jack cheese, half of a cup to one cup depending on how much sour cream you like right into your mixing bowl as well as half of a package of taco seasoning. I like to use the lower sodium seasoning because the cheese has a ton of salt in it. Just mix everything together until all of that chicken is fully coated in the sour cream cheese and rotel mixture. Set this aside and let's get to work. This is only going to take you about 10 minutes to put together. Put a scoop of that mixture onto each one of your tortilla half moons and roll it up to create a cone. Look at how cool these look. Only takes a second or two to line them out on the tray and put a thin coating of cheese. Now, I put a cup in the center of my tray just to kind of keep things on center. You don't have to do that. Just continue to move around and create three layers of your quesadillas. Then put this in the oven at 350 for about 15 minutes until everything's melted and browned. Make sure you take the glass bowl out if it's not oven safe. Then replace it, add some salsa, garnish with some cilantro, a slice of lime, and you are ready to serve. It is nor Spanish rice. You guys are always giving me a hard time about not washing my rice and this rice is not supposed to be rinsed. We're going to follow the instructions on the back which say two cups of liquid per bag and we have two bags. So, we're going to do an entire container of chicken broth and the rice also called for one tablespoon of vegetable oil per package. So, we're going to add two tablespoons. Now, I have one can of drained black beans. We're just going to put this here. This is going to be a delicious Mexican rice and bean casserole. It's so easy. We're going to grab our mixing bowl. We're going to put on our latex gloves. We're about to handle some raw chicken and we're going to need some gloves here. We have two large chicken breast. I'm going to get my kitchen scissors here and just trim these up. This is so much easier than getting a cutting board and knife dirty. You can trim off some of the fat and just throw that away. You don't need to rinse your chicken. I just patted mine dry with a paper towel. This is seriously such an easy dish. It's great any night of the week. Now, we're just going to cut up our second chicken breast again into bite-sized pieces. Once all of your chicken breast is cut up, we're going to grab one container of taco seasoning. I love this Taco Bell Taco Seasoning. We're just going to go right on top of our chicken and the easiest way to mix this up is just get your hands in there and get every piece of chicken coated in that delicious taco seasoning. Now, we're going to dump this into our broth and rice mixture here. Just get it all dropped in on top. We're going to go ahead and take our gloves off. We're going to use our little spurtle and just get all that chicken submerged. You want to make sure that rice is fully covered so it can absorb all of that chicken broth. Now, we're going to add one sixteen ounce jar of your favorite salsa. This is a chunky on-the-border brand salsa. We're just going to go right on top like that. Now, you can cover with foil or if you have a lid for your casserole dish, go ahead and put that on. Our oven is preheated at 375 degrees. We're going to throw this in for about 45 minutes til that rice is cooked and we're going to add some toppings. Alright, after 40 minutes. Our rice is fully cooked. Our chicken is done and that looks beautiful. We are going to grab some of our spicy queso blanco and we're just going to drizzle about a fourth of a cup on top here. This thing is going to be cheesy and amazing. Now, we're just going to get our and we're just going to mix up that cooked chicken and cooked rice to make sure you scrape the sides and just give it little mixture there. We're going to add a little bit more queso on top and then the crown jewel is our Mexican blend shredded cheese. We're going to put about two cups over the whole thing here and I like spicy so my half is going to get some jalapeno wheels. My wife doesn't like spicy so I'm going to leave those off of her half but we're going to throw this back in the oven uncovered for about 10 minutes. Come back and serve. Alright, after 10 minutes, our casserole is completely done. Our cheese is melted. This thing smells amazing. We're just going to get in here. You guys always give me a hard time for eating from my wife's side but I'm making to get the jalapeno side. Look at how good that looks you guys. Our rice is fully cooked. Our chicken is fully cooked. Absolutely delicious. Let's try by. Mm. That is so good. You gotta try this.

Repeat till filling and tortillas are gone. Whisk together sour cream, cream of chicken soup salsa Verde and chilies. Pour on top of tortillas in pan. Spread in an even layer. Add cheese to top. So I peeled it off last night while it was still warm. To this I'm going to add one small brick of Velveeta. So I cut it into little squares. Alright so we're going to separate these squares. I guess they're not little squares. They're kind of big. This stuff has like such a weird texture. I know it's like not real cheese but it's delicious. So we're going to spread this out. And today I'm using my crockpot liner. Sometimes I like them y'all. Alright now we have some green onions as well. Um so we're going to do a good amount. Maybe let's see a little bit more alright perfect after that here we going to add one can of rotel I'm using the original I did not drain it just going to put this right on top We're also going to add one can of cream of mushroom soup with roasted garlic. We're going to blob it right on in, alright? Just like so and then we also have one can of cream of chicken soup. We're going to try and get it out. I know all y'all tell me all the tricks and I never do it. Like pocahole in the bottom or something but yeah. Anyways, we're just going to scoop this right on out. Soup jello. Soup jello and cheese jello. That's what we're having today, folks. That's what we're having today. Alright, we're going to take a half stick of butter. We're just going to put it right onion, alright? Um we also have here one eight ounce brick of cream cheese. So, we're just going to get it all over my, yeah. Okay, this is what I'm doing y'all because that that's how it is. Alright, right on top. It's fine. We're just going to push it into the soup jello and we're going to jiggle it a little bit. That's real important, alright? Alright, I have a half a cup of chicken stock, half a cup. Just going to pour it right on top for a little extra liquid. Alright, y'all. Now, we're going to do here. I'm going to put some seasoning in. So, I have some minced onion. I'm going to sprinkle that on top. Um we also going to do here some cracked black pepper. Much or as little as you'd like. I gotta get have y'all seen those little those little things that like automatically do it. It's like zoom and it has a lot. I want to get one of those. Anyways. Alright y'all now I'm going to use this flavor God garlic lover seasoning. See y'all I'm going to tell y'all the truth. This company sent me these seasonings to try for free. They sent them sent me a bunch for free which is amazing. I know this one's a little pricey but y'all look how much of this I've used. I actually really like it. So I might I might buy some of this when I'm done. That's all. Anyways carry on. We putting a healthy amount of that in there what else oh that's it alright yeah I'm trying to see if there's any other seasoning I want to use nope there's already salt in that okay y'all so basically all we have to do here is let the cheese melt and let all the ingredients kind of go together so I'm going to cover this and cook it on half for about two hours I'm going to mix it every so often and then we're going to add one more thing y'all are going to love this easy delicious dinner alright y'all so here we have the chicken mixture with the velveeta and the rotel and the cream cheese and the other stuff so it's cooking on hot for about 2 hours. So y'all just make sure again you mix it every so often while it's cooking. Alright and we had our whole rotisserie chicken in here as well. So now we're going to do. Oh it smells real good. That rotel smells great in here. Alright y'all so now what we going to do here is have one package of spaghetti that I cooked. We're going to dump this whole thing right onion. Just like that. Mmm mmm mmm. Okay? Like that. Now we going to now we just going to mix it all together. Alright y'all. So I'm just going to give this a little mix and then we going to come back and actually see. Am I going to stop it? I might not stop the camera. I was going to but it actually Imma stop the camera for a few minutes while I mix y'all. I'll be right back. So now, we going to move this to the side. I'm going to get my bowl and we're going to put some in the bowl. Oh my goodness y'all. This going to be so good. Mmm mmm mmm. Get a little bit more. Y'all y'all like how I always give myself these huge portions? Oh my goodness. Like I'm not going to eat all this right now but I don't know. I just feel like it looks pretty. Um this is going to be real hot y'all so because I just turned the crockpot off but it's okay. So I'm I might just try like one little piece. I've made this before. I know it's good but here we go.
