Ingredients - scallops - Bacon - Maple syrup - 1 oz bourbon - Rosemary Instructions Pat your scallops dry. The dryer you can get the exterior the better sear you will achieve. Scallops and bacon cook at different speeds. You do not want to over cook your scallops so half cook your bacon so it’s easy to wrap around the scallop. The bacon will finish cooking as you cook the scallops. Trim your bacon so when you wrap it around the scallop it’s flush with each end. This will give you a great sear.
