Ingredients: 1 1/4 lbs boneless skinless chicken breast or thighs (cut into bite-size pieces) 2-3 tbsp vegetable oil 1 medium onion, finely chopped 2 large carrots, peeled and finely chopped 3/4 cup frozen peas 2 cloves garlic, minced 3 large eggs 2 tbsp butter 4 cups long grain white rice, cooked and chilled 3-5 tbsp soy sauce 1/2 tsp sesame oil 2 green onions, chopped Salt and pepper, to taste Instructions: Cook Chicken: Heat 1 tbsp oil in a skillet over medium-high heat. Add chicken, cook 2 mins per side until browned and cooked. Transfer to a plate and cover. Cook Vegetables: Heat another tbsp oil, add onion, carrots, and peas. Cook for 5-7 mins until tender. Add garlic, cook 1 min. Transfer to plate with chicken. Scramble Eggs: Whisk eggs. Add 1/2 tbsp butter to skillet, reduce heat
