This traditional Swedish kanelbullar (cinnamon buns) recipe is made with a perfectly soft and chewy cardamom dough, a buttery cinnamon-sugar filling, and twisted into cute little knots.

These Kanelbullar, or Swedish Cinnamon buns, are light, fluffy and simple in flavor. The focus is on the fragrance of the cinnamon, the accent of the cardamom, and soft texture of the dough, contrasting the crunchy pearl sugar (optional).

This traditional Swedish cardamom almond bun is eaten between Shrove Tuesday and Easter but is delightful any time of year. Usually the filling is made with almond paste or marzipan, but the instructions below use almond flour. See the section above if you want to almond paste, marzipan or almond meal.
