Hayley Lentino | Sourdough Tutorials on Instagram: "Sourdough pepperoni pizza loaf 100g starter 200g smooth (not chunky) pasta or pizza sauce 200g filtered water 450g unbleached bread flour 50g whole wheat flour 10g salt Add-ins: Your choice of cheese Chopped pepperoni (You can use 500g bread flour if you don’t have whole wheat but the water may need to be reduced!) Mix sauce, starter, and water together to get a milky consistancy Add flour and salt and mix to get a shaggy dough with no dried flour clumps- if your dough is too dry after mixing, add a little bit of water until all dried flour is wet. Let rest covered for 1 hour. Do 4 rounds of stretch and folds 30 minutes apart. You can choose to add cheese and chopped pepperoni during stretch and folds or during shaping B
