Snickers Energy Bites 13 softened and pitted Mejool Dates, chopped 1/2 cup peanut butter 2 cups of gf rolled oats 1/3 cup of peanuts 1/2 cup of dark chocolate chips 1 tsp coconut oil Directions. If dates are hard, place them in a bowl with boiling water for 20 minutes to soften them. Combine oats, peanut butter, peanuts and chopped dates in a 6 cup food processor. Scraping down the sides until it’s a fine crumble. Combine small amounts into balls. Place each ball gently on parchment paper lined pan. Place balls in fridge to firm up for 30 minutes. In a microwave safe bowl, mix chocolate chips and coconut oil. Heat in 30 second increments and stir until melted. Usually about 1 minute total. Drizzle chocolate on top of the energy bites. Top with chopped peanuts if desired. Enjoy!
