Spice up a traditional favorite this season. In under 25 min, make a dish people will talk about for years. Chop 1 clove garlic, 4 shallots, 2 chilies and 1 tbsp. lemongrass and cook in 1 tbsp. oil and 1tbsp. butter until fragrant. Add 2 1/8 cup of chicken stock, 1 ½ cups of unsweetened coconut milk, 4 cups of diced pumpkin and bring to a boil. Once the pumpkin softens, blend. Serve with 1 bunch of basil.

Impress your guests with this minty fresh orzo salad fit for a summer soirée. Boil 4 cups chicken broth, covered. Stir in 1 ½ c. orzo. Cover partially & cook until orzo is tender, stirring frequently, ~ 7 minutes. Strain orzo, transfer to bowl & toss until orzo cools. Toss orzo w/ ½ cup feta cheese, 1 ½ c. halved teardrop tomatoes, ¾ c. finely chopped red onion, ½ c. chopped basil, ¼ c. chopped mint, & your favorite red wine vinaigrette. Season salad w/ salt & pepper. Serve at room temperature.
