Ingredients (serves 2): 120g uncooked pasta One small white onion 1/2 red pepper 1/2 yellow pepper Handful of mushrooms 1/2 pack fajita mix (can use Cajun instead) 300mls hot water 120g halloumi lighter 60g garlic and herb Philadelphia (cream cheese) This dish is made in two parts 👀 Part 1: Add the pasta, onion, peppers, mushrooms to an oven proof dish. Pour in 300mls hot water. Sprinkle fajita mix on top and stir thoroughly. Cover with foil then put into a pre heated oven and bake for 30 mins at 180 (keep an eye every 5 minutes and adjust the temperature/ time if needed). Part 2: Remove from the oven and add the Philly. Mix thoroughly then add the halloumi on top. By adding the halloumi last this will crisp it up. Put into the oven for a further 15 mins. Again keep an eye every 5 mins and adjust the time if needed.
