(For 8-9inch tart) Dough 100grams flour all purpose or t55 50 grams cold butter, cut in small cubes 12 grams almond powder 30 grams icing sugar Pinch of salt 20 grams of egg or I used just egg yolk Rub the flour and butter together till sandy texture. Add the rest of ingredients and mix till combined. Then put on table and using the palm of your hand, rub the dough out. Place dough in fridge for 30 minutes. Squeeze the lemons and strain the juice through a mesh sieve to remove any seeds or pulp for a smooth texture. 2. In a small saucepan, whisk together the lemon lemon juice, sugar, and cornstarch until well combined and smooth. 3. Place the saucepan over medium heat and bring the mixture to a simmer, stirring constantly. Cook for 2-3 minutes, or until it thickens into a creamy consistency. 4. Remove the mixture from heat and let it cool slightly. Then, transfer to the fridge to chill for about 30 minutes to 1 hour, or completely cold. 5. In a large bowl, whip the cream until peaks form. 6. Stir about 1/4 of the whipped cream into the chilled lemon mixture to lighten it, using the electric whisks. 7. Fold the rest of the whipped cream into the lemon mixture gently until fully combined and smooth. 8. To start, add one cup of sugar to a saucepan. Mix it well until it turns into caramel. When it reaches this consistency, add one half cup of water gradually. With caramel melted in another bowl, mix one TBSP cornstarch with two TBSP water. Blend this mixture thoroughly. Then pour it all into our caramel. Now mix a bit more until our caramel is smooth. You'll need to stir for about three to 4 minutes. When bubbles are larger and it's this consistency, it's perfect. Now remove the caramel from heat and pour into another container. Just let it cool down and it's ready to use. This caramel is ideal for no baked puddings and desserts. For example, popsicles, cup puddings and more. This isn't the final texture of our caramel. I'll show you how it looks when fully cooled at the end. Right now it's still a bit warm. It will thicken up a bit more. The best part, you can make a large batch and store it.
