It's a lot of fun. You could do it in the summer. You could do it on the grill. I'm doing it in the oven because it just taste a little bit less gas and it's a little bit more convenient. So, we're starting off with this medley of spice seasoning. We got some smoked paprika, garlic powder, chili powder, cayenne pepper, brown sugar, salt, and pepper. You could add other ingredients to this as well like thyme or oregano or cumin if you like that flavor profile. The trick here is to make sure to add smoked paprika, garlic powder and brown sugar. That's those are the bases in terms of seasoning. Now I have this three pound rack of baby back ribs. And I'm using a paper towel to remove the silver skin. I just find that super easy to do. And then I'm fully coating this rack of ribs in the spice seasoning. Now obviously I made more than what I'm going to use to season this rack. But what you don't see is that off camera I actually made another one. So that seasoning is good for two roughly three pounds racks of ribs. And as you can see I'm rubbing it in both sides making sure that it's completely coated. But we're not done yet. So I'm going to set this aside and I'm going to fill up a container with some barbecue sauce. This is a sweet and spicy barbecue sauce. Then I'm going to take a peeled pineapple and submerge it in the barbecue sauce making sure that's fully coated. This is going to keep the ribs moist. It's going to add a nice flavor but also it's going to make a sauce which you gotta stick around to the end to see. Now, I'm going to use skewers to make sure the ribs stay wrapped around the pineapple. Um I'm using some thick skewers. It took about four two on one two on the other. And then I'm going to wrap the entire rack of ribs with aluminum foil going all the way halfway up the crown of the pineapple. And then I baked it at 300 degrees for three and a half hours. I know it seems like a long time but trust me the results are going to impress you and whoever you're serving this to for sure. Once I took it out of the aluminum foil. Leave that. Leave the juices in there. Set that aside. I cut the off, put that aside, remove the skewers, and then slice this in half. You could see that the ribs formed around the pineapple which not only cooked them properly because of the enzymes in the pineapple but also added a really nice tangy and kind of tropical flavor. Once the ribs were cut out, I chopped up some of the pineapple or diced it up but before that, you gotta make sure you move the core because even though we cook this for three hours, it's still kind of flavor and not that edible and then I diced up the pineapple because I'm going to mix this with the ribs don't sleep on this pineapple it's got a really awesome flavor it's got like a savory flavor it's got a spicy flavor sweet obviously from the pineapple and then I added the crown to the center of this serving dish chopped up all the ribs and placed those down and then added the diced pineapple on top this is the liquid left over from cooking all this it's a combination of the seasoning barbecue sauce, the pineapple juice, and made an awesome barbecue sauce and then I garnished it with some sliced up green onions. Here we go, pineapple baked ribs. We got the pineapple here which is savory. It's spicy. It's got that tang from the barbecue sauce. I got these ribs perfectly cooked. Not quite fall off the bone but sometimes people like a little bit of give. I'm one of those people for certain occasions. Let's go in for the bite. Wow. Like I said, we got that pineapple flavor. Nice tang. Spice from the rub. Also that sweet and spicy barbecue sauce. Super delicious. You gotta try this.
