6 ripe mangoes (750g flesh) 2 limes (juice, organic+rind better) 2 Tsp chilli flakes 600g sugar Cook 10 min ×3 and cool in between Puree Last 15 min boil with lemongrass Remove lemongrass Fill in jars Adding more lime juice add the end would have been good Or apple cider vinegar? May have needed more acid.
