We're going to start off with two pounds of unsalted butter. You can use any brand of butter. This one just happens to be from Aldi but I've used a bunch of different brands. Make sure that you are using pure real dairy butter. Not margarine not shortening real butter. Start slow so that you don't fling everything everywhere but we are going to bring it up to a speed eight and we're going to let this run for 20 minutes. Yes, 20 minutes. This is what it looks like after 5 minutes. We're close but we're not there yet. Using the battle attachment whips in all of air in there and it keeps it nice and airy but also bubble free. This is what it looks like after 20 minutes. Look at the difference between that white color that is just butter and then all of that yellow butter on the side. Once you get that mix for 20 minutes, then you can incorporate your two pounds of powdered sugar. Make sure that it is powdered sugar or confectioner sugar not granulated white sugar. You can sift it if you want but you don't have to. Once you get that mixed in, you just want to mix it until it is well combined about two, three minutes and then you can add your vanilla extract per pound of butter I like to add one tablespoon of vanilla extract so for this I use two tablespoons of it then I'm going to add/ 2 of a teaspoon of some salt and just let that mix again for about two to three minutes so then in total you have mixed it for 20 minutes with just the butter and with the sugar and the salt and the vanilla five minutes so 25 minutes total after it's been mixed for 25 minutes, there is so much friction that was going on it is going to be soft so I like to let this sit on the counter for at least an hour but preferably overnight in a closed container and at room temperature and it up beautifully. I use this for cakes, cupcakes, cookie cakes. I recommend using a stand mixer for this. You can also do this with a hand mixer but it's going to take a lot longer just not by hand.
