For this recipe we were inspired by a similar delicious creation from @emthenutritionist 🤍 ⁠

Ingredients: ⁠
- 400ml (14.1oz) tin coconut milk ⁠
- 2 tbsp red curry paste ⁠
- 1 tbsp peanut butter ⁠
- 2 cups (500ml) stock, we used chicken ⁠
- 2 serves noodles, we used long-life wheat noodles ⁠
- 1 bulb baby bok choy, chopped⁠
- ½ bunch broccolini, chopped⁠
- 1 red capsicum, in thin strips ⁠
- 250g (8.8oz) prawns⁠
⁠
To serve:⁠
- 2 spring onions, chopped ⁠
- 1 tbsp chilli oil ⁠
- 1 lime, juiced ⁠

It has about 20 g of protein per serving and is overall just such an easy and delicious family dinner! I like to serve mine with some rice that I make in the instant pot. 3 cloves of garlic, minced
small yellow onion, finely diced
1 teaspoon of cumin
1 teaspoon of ground coriander
1 teaspoon of turmeric

spice mix:
1tsp ground ginger 
1tsp chilli flakes
1tsp paprika
1tsp cumin 
1 heaped tbsp hot curry powder 

4 cloves of garlic 
2 large vine tomatoes 
2x tins green lentils
2x coconut milk 
Olive oil
salt & pepper 
(Optional) corriandor, coconut yoghurt and naan bread to serve 🤎

fry your spice mix with no oil for 30 - 60 seconds then add the garlic, olive oil and tomatoes and simmer for 5 minutes. then add the lentils and coconut milk and let it simmer for about an hour…. stir it every once in a while so it doesn’t stick to the bottom of the pan. season with salt and pepper to taste and serve up with coriander, coconut yoghurt and a carb of your choice 🤎 enjoy
