This imaginatively-named, colourful salad started out in life as a dip. Originating in Texas (hence the use of "cowboy" in the name), it's usually served as a party appetizer with corn chips for scooping - you might have seen it doing the rounds on TikTok. But we couldn't resist turning this eye-catching dish into more of a centrepiece, so our nutrition editor Chrissy resurrected it as a salad. With chopped, vibant capsicums, cherry tomatoes, corn and fresh herbs - it's easy to see why it's such a crowdpleaser. Chrissy thinks it's great as a vegan main, due to its high protein content. Even better: it's gluten free too, high in dietary fibre and low in saturated fat.
