This foolproof recipe will elevate your croissants and pain au chocolat to bakery-level perfection. 📜

**Ingredients:**
- 750g Strong flour
- 250g French flour (Tradition T65)
- 420g Water
- 50g Egg
- 20g Salt
- 140g Sugar
- 45g Fresh yeast
- 125g Butter
- 500g Lamination butter

**Instructions:**
1. Mix the dough and divide into 2 pieces. Chill overnight.
2. Next day, laminate using 250g butter per piece: 1 double, 1 single fold.
3. Shape: croissants (base 9cm, length 33cm) or pain au chocolat (8cm by 28cm).
4. Proof in a folding proofer from @brodandtaylor at 28°C (no higher to prevent butter leakage). Use a water tray inside the proofer for perfect humidity.
5. Proof for 2.5 hours.
6. Bake at 375°F for 20 minutes.
