also known as gajrela, gajar pak or carrot pudding, gajar ka halwa is traditionally a winter dessert. it's a very popular dessert from the indian subcontinent, specially in northern India. the original recipe had carrots, sugar, ghee and milk that's reduced by constant stirring. the recipe has evolved over the years and my version here is the upgraded one where I have incorporated khoa/mawa and cream. it's best served hot/warm. give it a try!
