Very tender and open, just like your heart on Valentine’s Day😁 Delicate flavor coming from the rose petals followed by chocolate, pure love. I mixed the dough with 350g bread flour and 297.5g water (85% hydration)as 35.5g came from two egg yolks, so 262g water. l did 30min autolyse. Then added 70g levain. Followed up with 7g salt. I did one lamination where I added the rose petals and the chocolate chips. Total bulk was 7.5h when I shaped the dough but then I left it in the banneton for additional 1h 10 min before I put it in the fridge for 12.5h proof at 40F. Baked straight from the fridge as per usual. With spring coming, this sourdough is so suited for the season. It's blooming and welcoming, sweet and happy-making.
