Give them a try and let your taste buds be amazed 😍 You’ll need: 1 1/2 cups walnuts 10-12 pitted dates 1 cup cashews 4 tbsp coconut oil, melted 3 tbsp pure maple syrup 1 tsp vanilla extract melted dark chocolate (or you can use equal parts melted coconut oil and carob powder if you want a chocolate alternative - this is what I used) 1. Combine walnuts and dates in a food processor. I processed the walnuts first and then added in the dates. 2. Press the mixture into the bottom of a lined baking dish. 3. In a food processor, combine cashews, coconut oil, maple syrup and vanilla extract until smooth and creamy. If the mixture is too thick, add hot water one tbsp at a time until you reach your desired consistency. 4. Add this layer to the baking dish and place in the freezer while you melt your chocolate. 5. Pour melted chocolate on top of the previous layer and let set in the freezer for 30 minutes. 6. Of course pistachio takes everything to the next level, and I think you’ll just love these🤤🤩 ✨Ingredients 1 3/4 cups finely shredded coconut flakes (150g) 1/2 cup finely crushed pistachios (48 g) 1/4 cup maple syrup or agave 1/4 cup olive oil (I used @getgraza) 1 tsp matcha powder 1 tsp vanilla extract a pinch of salt 1-2 tbsp dairy-free milk (add a tablespoon at a time until you can squeeze the dough with your hand and it sticks together) ✨For chocolate topping 3/4 cup dark chocolate chips ✨Directions Measure out the shelled pistachios and use a food processor to pulse them until you get a very fine powder. In a bowl, combine all of the macaroon ingredients together and mix well. Squeeze the dough together in your hands, and if it clumps together when squeezing it, it’s ready. If it crumbles and falls apart, add another tablespoon in milk until it sticks together. Take a cookie scoop and scoop up a dollop of dough, packing it in tightly. Drop it on a parchment-lined baking sheet. If they crumble a little, just use your fingers to reshape them. Repeat until you run out of dough. You will get between 7-8 cookies, depending on how big you make them. If you want more, feel free to double the recipe. Bake the macaroons at 350F for around 13 minutes, until the edges are golden brown. Allow the cookies to fully cool. If they are not fully cooled, they may fall apart. Melt the chocolate chips in the microwave, transfer it to a small shallow bowl, then dip each macaroon in the chocolate, just covering the bottom. Repeat with each macaroon. Making butter crunch toffee is pretty easy just be careful to set your temperature on medium and take it off the burner when it is a golden amber colour. Here is my recipe 1 cup brown sugar 1/2 cup salted butter 2-3 Cups Chocolate Combine both ingredients in a non stick pan and continuously stir until a golden amber colour or 290 F. Even if it gets grainy just keep stirring until it changes and comes clear and a golden colour. Take off the burner and pour into parchment paper. Cool and spread melted chocolate overtop and sprinkle with chopped almonds. Or leave as is and just chop it up to use as a delicious topping or in desserts.
