If you can’t find fresh rice noodles, the packaged dry ones can work too. Just make sure you get the wide noodles. Step by step instructions are in the video. Candy Tran on Instagram: "Miến sườn cay - Spicy pork ribs glass noodle soup Parboil pork ribs with slices of ginger and shallots for 5 mins to remove impurities then marinate - 1 kg pork ribs 2 tbsp of fish sauce 1 tbsp of seasoning powder 1 tbsp of xo sauce Cracked pepper 1 tbsp of sugar Mince 5 garlic and 1-2 chillies depending on your spice tolerance. Lightly fry for a couple minutes before adding in the pork ribs. Add 2.5litres of water and cook for 1.5-2hours until the pork are tender Adjust seasoning to your liking - 2-3 tbsp of fish sauce and 1 tbsp of sugar. Add in glass noodles and Thai basil.
