In a medium bowl, mix together flour, sugar,  salt, and butter with your hands until the  mixture has the consistency of cornmeal. 2. Make a well in the center of the flour mixture and pour in the milk. Mix the dough until it comes together, being careful not to over-mix as it can make the biscuits tough. 3. Pour the dough onto a floured surface and press it out evenly. Then, fold the dough from each side,followed by folding the top and bottom. 4. Once the dough is folded, pat it down into a rectangle about 1/2-inch thick. 5. Use a 3-inch biscuit cutter to cut out your biscuits. 6. Place the biscuits on a buttered baking sheet or cast-iron pan. 7. Preheat your oven to 375 degrees and bake the biscuits for 25 minutes, or until they are golden brown. 8. Serve the biscuits hot with some strawberry jam for a delicious treat! I normally eat 2 pieces in one sitting, at the very minimum LOL. I personally loooove walnuts in mine, but if you aren’t into nuts exclude! It’s a recipe for everyone 😍 There are a few notes from him on the recipe and I’ll include those as well in the comments. Because trust me, you’re going to want to make this EXACTLY like Bill. INGREDIENTS: 1 2/3 cups all- purpose flour 1 tsp baking soda 1/2 tsp ground cinnamon 1/2 tsp kosher salt 1/2 cup white sugar 1/2 cup plus 2 tbsp brown sugar 2 eggs 1/2 cup avocado oil 3 1/2 very ripe bananas peeled and mashed (about 1 1/2 cups) 2 tbsp sour cream 1 tsp vanilla extract *Optional: 1 cup chopped walnuts split (3/4 cup is mixed in batter, 1/4 cup is sprinkled on top before baking) DIRECTIONS: With the rack in the center of the oven, preheat to 325°F. Lightly butter and flour pan(s) of choice. Sift together the flour, baking soda, cinnamon and salt in a bowl and set aside. With a stand mixer fitted with the whip attachment, beat together the sugar and eggs on medium speed until light and fluffy, about 5 minutes. Switch to low speed and slowly drizzle in the oil, taking your time. (You want to keep all the air you just beat into the mixture). Add the bananas, sour cream, and vanilla, and continue to mix on low speed just until combined. Use a rubber spatula to fold in the flour mixture thoroughly combined. No flour streaks should be visible. Using a spatula, mix in 3/4C of chopped walnuts Pour the batter into the prepared loaf pan(s) and bake for 1 to 1 1/4 hours for a 9×5-inch loaf, and about 50 minutes for three 6×3-inch loaves. The loaves should be golden brown on top and the cake will spring back when you press it. Let cool in the pan on a wire rack for 30 minutes, remove from the pan and let cool completely on the wire rack.
