Pistachios ice cream 2 cups of heavy whipping cream 1 14 ounce can of condensed milk 2 cup of pistachios 1 teaspoon vanilla extract In the mix or whip up your heavy whipping cream until stiff peaks. In a food processor add the pistachios until it looks chopped, then add the condensed milk and vanilla and pulse until combine. Then fold in the heavy whipping cream and pistachio mixture and it place in the freezer 6 hours or over night. I love making the kids instant soft scoop by whizzing up yogurt with frozen fruit - but adding pistachio was new to me until a friend sent me a video on here 😎 I’ve socked the pistachios in boiling water for 5 minutes (soaking is known to release vitamins and beneficial enzymes are activated, apparently) Rinse them in cool water and add to yoghurt, ricotta and frozen mango. Blitz and serve as soft scoop OR freeze for 30 minutes to serve as a firmer scoop. SCOOPS FOR ALL ;) Notes: - Pistachio and yogurt are GREAT sources of natural protein - I’ve used ricotta as I have a ricotta no churn ice cream from my 2017 cookbook - You could add any frozen fruit - bannana or chery?
