Add 1/2 cup of flour to bowl. Dip chicken breast in flour (again, both sides!). 2) Melt 1tbsp butter and 1tbsp olive oil in pan. Once melted, add chicken. Cook on each side until brown. About 4 minutes! After both sides are cooked, put on plate. 2B) Well the chicken cooks, I get mashed potato started. Scrub 2 russet potatoes. Dice potatoes! No need to take skin off.
