20min · 4 servings Directions Heat a medium pot over medium heat. Add sesame oil, ginger and garlic and saute until fragrant. Add chicken stock and kombu dashi stock, then bring to a boil. Lower heat, add soy sauce, Takara Mirin, sugar and salt and let simmer for a few minutes, then strain broth. Bring a large pot of water to a boil and cook dry ramen noodles according to package directions. Divide noodles among bowls, top with broth and your favorite toppings. 1 teaspoon sesame oil 1 teaspoon ginger, minced 1 clove garlic, minced 2 cups chicken stock 1 cup kombu dashi stock 3 tablespoons soy sauce 1 tablespoon Takara Mirin 1 teaspoon sugar 1 teaspoon salt 6 oz dry ramen noodles Optional toppings: soft boiled egg, green onions, sliced pork belly, sliced tofu, nori, sesame seeds

1 nori sheet 1 block soft tofu, cut into 4 pieces 2 Tbsp. soy sauce ½ tsp. dashi powder dissolved in 2 Tbsp. water 2 Tbsp. Takara Mirin sliced green onions, for garnish bonito flakes, for garnish Directions Place the sheet of nori into the bottom of a saucepan. Put the blocks of tofu onto the nori. Pour enough water into the pan so that the water just covers the tofu. Heat the pan over medium low to medium heat and bring the water to a simmer. Simmer the tofu for 6-8 minutes. In a small bowl, add in the soy sauce, dashi mixed with water, and Takara Mirin. Mix until combined. Use a slotted spoon to transfer the tofu pieces from the pan onto the serving dishes. Spoon the prepared sauce over the tofu and garnish with sliced green onions and bonito flakes. Enjoy!

RECIPE,Serves: 2 1.5 lbs manila clams, cleaned 0.75 cup SCB Classic Junmai 2 tbsp Takara Mirin 1 knob ginger, peeled and fine julienne 1 dried red chili pepper, minced 1 green onion, sliced Add clams, SCB and Takara Mirin to pan. Place ginger and dried chili on top. Cover pan with lid and bring liquid to boil over med high heat. Once it comes to a boil, lower heat to med and continue to steam for 3-5 min until shells open. Remove lid and turn off heat. Sprinkle green onions over top and enjoy!
