Parmesan Crusted Chicken with Lemon Butter Sauce

- 1 1/2 lb chicken breast, (2 large), patted dry with paper towels
- 1 cup Parmesan cheese, grated
- Dry Ingredients:
- 3 tablespoons all-purpose flour
- 1 tablespoons olive oil
- 1/2 lemon, sliced
- 1/2 teaspoon Italian seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon ground black pepper
- Wet Ingredients:
- 2 large eggs
- 1/2 teaspoon minced garlic
- Ingredients for Lemon Butter Sauce:
- 1/2 cup butter
- 1/4 cup chicken broth
- 1/4 cup lemon juice
- 1 teaspoon minced garlic
- 1/4 teaspoons black pepper
- 1 tablespoons parsley, for garnish
Instructions
- Halve the chicken breasts lengthwise, then gently pound with a meat mallet for uniform thickness.
- Combine the ingredients for the egg mixture in a bowl and whisk. In another bowl, mix the components for the parmesan mixture. Dip the chicken into the egg mixture, then coat it with the parmesan mixture, shaking off any excess from both bowls.
- Heat enough oil in a large skillet to cover the bottom. When hot, add the chicken and cook for 4-5 minutes per side, until they’re crisp, golden, and reach an internal temperature of 165˚F as measured by an Instant Read Thermometer. Lower the heat if browning occurs too quickly.
- In a separate saucepan, melt butter and garlic, cooking until aromatic. Introduce chicken broth, lemon juice, and pepper to the saucepan. Let the sauce simmer for about 2 minutes. Pour this sauce over the cooked chicken, ensuring even coating. Optionally, adorn with lemon slices and finely chopped parsley for extra flair.
This tasted great but the recipe is hard to determine what goes in the dry and wet dredge . I added some zest from the lemons to the Parmesan mixture. I just left the eggs as the only ingredient in the wet and put the rest of the seasoning in the Parmesan, unused garlic powder as wet garlic wouldn’t do well. Overall I’d donut again

Excellent! Wow! This recipe is a keeper for sure! I did very little tweaking. I used 1/3 cup of juice and broth just to ensure there was plenty, and I added garlic powder and onion powder to the egg mixture. That’s it! Served with spaghetti noodles with the sauce poured over everything. So good, thank you!
