Cucumber Salad
Cucumber salad with tomato is my husband’s favorite. The other day, when I asked him what he wanted for breakfast, his request was fried eggs and this salad. Who doesn’t have a salad with eggs for breakfast, right? 😉
To be fair, there really is something magical about the combination of crisp, crunchy cucumbers and juicy tomatoes. You get all the best textures in one tasty bite!
I found one way to improve on my favorite salad recently: goat cheese! By adding goat cheese into the cucumber salad, you get a creamy, tangy base note—it’s almost like adding a sour cream dressing, but better.
Tips for Making the Goat Cheese Salad
- Cocktail Cucumbers are best for this recipe, but you’re welcome to use regular English Cucumbers instead.
- Use regular chopped tomatoes if that’s what you have on hand. However, cherry tomatoes keep their shape well and look better.
- Dill and olives are optional, but recommended!
- Use the best goat cheese you can afford. It’s definitely worth the investment since it’s a vital part of the goat cheese salad.
How to Make the Tomato Salad with Goat Cheese
Making the tomato salad is easy. Chop the veggies up, then combine all the ingredients, including the goat cheese with the olive oil. Toss with salad tongs to coat— enjoy!

This Cucumber Tomato Salad is a refreshing spin on a classic lettuce-based salad. The addition of creamy goat cheese and black olives adds an unexpected creaminess and tang to this delicious summer staple.
Ingredients
- 6-7 cocktail cucumbers
- 2 cups cherry tomatoes
- 1/2 large sweet onion
- 1/2 cup goat cheese
- 1/4 cup black olives
- 1 tbsp chopped dill
- 2-3 tbsp olive oil
- 1/2 tsp kosher salt
Instructions

Cut the cocktail cucumbers into 1/4 inch circles, tomatoes in half and the sweet onion to a small dice. Finely chop the dill as well.

Combine all ingredients, including the goat cheese, black olives, olive oil and the salt in a bowl. Toss to combine. Taste and adjust the seasoning if needed.Â

Substitutions -Â
- Cocktail cucumbers can be substituted with a regular English cucumber. You'll need about 2 cups of chopped cucumbers for 1 recipe.
- Cherry tomatoes can be substituted with regular tomatoes. 1 recipe requires about 2 cups of chopped tomatoes.
- The olives and dill can be omitted if you're not a fan.Â
