As a registered dietitian, I'm a big fan of a recipe that comes together quickly and is full of nutrients. And this blueberry chia pudding is one I could eat on a daily basis because it's so good and full of nutrition like heart-healthy fatty acids, dietary fiber for gut health, antioxidants, and plant-protein!
Blending the blueberries with milk and yogurt and mixing it with the chia seeds makes a delicious pudding-like consistency that can't be beat and the yogurt adds some extra protein. I hope you enjoy it as much as I do!
This was inspired by my Blueberry Cheesecake Overnight Oats, another quick & easy breakfast if you love blueberry flavor.

- Chia Seeds - chia seeds are the main ingredient! high in healthy fats, fiber, and protein. Plus, they are good for your skin, brain, and gut! Learn more about the health benefits of chia seeds.
- Blueberries - you can use either fresh blueberries or frozen blueberries for this recipe but I highly suggest using frozen blueberries. Regular blueberries, Wild blueberries highbush blueberries all work. Blueberries are high in powerful antioxidants called anthocyanins that give them their blue color.
- Greek Yogurt - Greek Yogurt or Skyr (Icelandic Yogurt) are both a source of protein and contain probiotics to help support gut health. Use plain or vanilla-flavored yogurt. If you are vegan, use your favorite dairy-free yogurt. Coconut milk yogurt, almond milk yogurt, or cashew milk yogurt are all options! You can sub yogurt with cottage cheese if you prefer.
- Milk - I use unsweetened almond milk for this chia seed pudding and like Califia Farms brand, but use your milk of your choice. Cow's milk, or plant-based milk like oat milk, soy milk, coconut milk or cashew milk are all good options.
- Honey - I personally use pure honey to sweeten this chia pudding. But you could easily replace the honey with a different sweetener like maple syrup, agave, or date syrup.
- Vanilla Extract - just a small dash of vanilla extract adds a smooth and rich flavor. Feel free to substitute with almond extract if you prefer.
