Cinnamon-Vanilla Chia Seed Pudding: I just made it with this recipe and it's so yummy.... 1 cup unsweetened coconut milk (you can use any kind you like), 3 tbsp chia seeds, 2-3 tsp coconut nectar sugar (or you can use 1-2 packets of stevia), 1 tsp pure vanilla extract, 1/2 tsp cinnamon, pinch sea salt. Stir everything in a small bowl & chill until it reaches your desired thickness, stirring occasionally (about 2 hrs).
